The Bedtime for Gonzo cocktail is an original creation from the mixmasters at the MerryWeather in Louisville. Its name honors Hunter S. Thompson, one of Louisville’s most notorious offspring who was no stranger to warm weather.

This delicious tropical bourbon cocktail made its debut one steamy July night in 2019 at the uncorking party for the third batch of Bedtime Bourbon.

Collect these ingredients

• 1 fluid ounce fresh grapefruit juice
• 1/2 fluid ounce fresh lime juice
• 1/4 fluid ounce passionfruit syrup (recipe below)
• 1/2 fluid ounce Velvet Falernum liqueur
• 2 fluid ounces Bedtime® Bourbon straight bourbon whiskey

Put it all together

Throw all the ingredients together in a shaker and shake vigorously with ice.

Pour over fresh rocks into an Old Fashioned glass.

Garnish with a lime wedge.

Down the hatch.


Make the passionfruit syrup

Combine 1 part passionfruit purée to 2 parts simple syrup.

Cook on medium heat for about 20 minutes.

Let cool before using.

(Syrup can be saved for future use if refrigerated in an airtight container.)
